Spicy Lamb Meatballs Cava-Inspired Bowl

Ingredients

Spicy Lamb Meatballs

Homemade Tzatziki Sauce

  • yogurt
  • grated cucumber
  • lemon juice
  • grated garlic
  • dill

Seasoned Rice

  • turmeric
  • paprika
  • cayenne
  • garlic powder
  • salt

Assembly/Toppings

  • fresh kale/spring mix
  • pickled red onions
  • feta cheese
  • hummus
  • pita chips
  • avocado
  • cucumber
  • cilantro
  • roasted peppers

Instructions

Spicy Lamb Meatballs w/ balsamic glaze

  • Throughly mix about 16 oz of ground lamb with dry seasonings listed above. Form into meatballs and sear on medium high heat for 6-8 mins of each side. Turn down the heat to medium and add a squeeze of balsamic glaze and a splash of soy sauce (I eyeball it) and reduce down to glaze. If needed, finish in oven for 5 mins at 350°F until the internal temp reads 160°F/71C.

Tzatziki sauce:

  • Mix together the ingredients listed above and adjust the thickness by adding more or less yogurt and lemon juice to your preference.

Pickled onions:

  • Mix ingredients listed above. Top with hot water in a small mason jar and let it sit in refrigerator for at least 15 mins before serving.
