Ingredients

  • 3 lbs of cut oxtails
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/4 cup chopped tomato
  • 1/2 onion
  • 1/4 cup carrot
  • Fresh Thyme
  • 2 scotch bonnet
  • Soy sauce
  • Browning
  • Ketchup
  • Worcestershire sauce
  • Beef broth
  • Garlic powder
  • Onion powder
  • White pepper

Notes

Note: Salt or more soy sauce to preference, but recommend waiting to add more salt until end of cooking phase to allow flavors and salt levels to fully cook down

Rice and peas

to accompany the stewed oxtail – all that's left is some plantain and maybe callaloo – yum!

Instructions

  • 1 cup long grain rice
  • 1/3 cup water
  • 1 full can of coconut milk (or just half the can and add more water, depending on preference)
  • fresh thyme
  • scotch bonnet pepper
  • 1 can of red kidney beans (my substitute for pigeon peas for this recipe)
  • salt to taste
