Yet another hearty and healthy dish 🤗
Chop up 2-3 sweet potatoes (depending on size, should have about 2 cups)
Season with harissa and this paprika mix
Roast until tender for about 20 mins

Make a quick dressing in a small mason jar with Dijon, maple syrup, olive oil, red pepper flakes, a drizzle of red wine vinegar, salt and pepper – shake in the jar until emulsified
Rinse your greens mix and add to your favorite salad bowl
Add all of your salad faves – I used dried cranberries, pistachios, shredded Parmesan, and bacon 🤭
Drizzle on your salad dressing and toss together (ensuring to not mash up the sweet potatoes)
