This rich and delicious soup is perfect for cozy season! Super flavorful!

Ingredients

Skinless chicken thighs (4-5)

1/2 yellow onion chopped

1/3 cup lemon juice

1/4 cup white wine

1 1/2 cups of orzo

Roasted garlic (or fresh but this is what I had on hand)

Vegetable or chicken broth (6 cups)

Shiitake mushrooms

Salt & pepper (start with 2 tbsps of salt and add a little more to preference towards to end)

Dairy free heavy cream

Chopped chives

1/2 cup shredded Parmesan (I used this one from Publix brined in Merlot)

Paprika mix seasoning from Gourmet Collection (shout out to Chef Resha for putting me on!!)

Toasted sourdough bread – I dare you to dice them up and make croutons out of them 🤩😜🤝

Recipe

Season chicken thighs with Gourmet Collection seasoning, citrus seasoning or lemon pepper (I would prefer lemon pepper but I only had the citrusy garlic seasoning Trader Joe’s on hand – just wish it didn’t have citric acid in it 😣). Feel free to use lemon juice and pepper alone.

Sear chicken thighs on high heat
Take out chicken to shred separately and sauté onions and roasted garlic in the fond (turn down heat as needed). Then add lemon juice and white wine. Reduce down
Sauté mushrooms (preferably in the fond, but I almost forgot about them and added them later – ignore me 😅)
Added shredded back to pot with broth
Add orzo
Add cream (I used dairy-free, but sort of pointless since I added Parmesan later 🤣)
Mix, mix, mix!

Add chives or any herbs of your liking – thyme and parsley would also work!

Add shredded Parmesan
Done!
Serve with sourdough toast or croutons. Add more cheese if desired and a squeeze of lemon juice. Enjoy! 🔥
